Pair with your favorite vegetable or pasta for the perfect dinner any night of the week.
Ingredients
- 2 large chicken breasts, boneless, skinless
- vegetable oil, for pan-frying
- 1/3 cup lemon juice
- 1 1/2 cups seasoned breadcrumbs
- lemon pepper, to taste
Directions
Step 1 -Slice the breasts in half, resulting in 4 thin chicken pieces.
Step 2 -Place a foot of plastic wrap on the counter and lay the chicken on top.
Step 3 -Cover the chicken with an additional piece of plastic wrap.
Step 4 -Pound the meat until the breasts are about 1/4-inch thick.
Step 5 -In a large pan, heat 1/4-inch of the vegetable oil over medium heat.
Step 6 -Squeeze the lemon juice into a shallow bowl.
Step 7 -In another shallow bowl, add the breadcrumbs.
Step 8 -Place each piece of the chicken in the lemon juice and allow it to sit for at least 2 minutes, flipping it halfway through its soak.
Step 9 -Prepare the chicken by allowing each piece to sit in the lemon juice for 2 minutes, flipping the chicken halfway through.
Step 10 -Thoroughly coat the chicken in the breadcrumbs until each piece of chicken is fully breaded.
Step 11 -Working in batches, fry the breaded chicken breasts in the hot oil until golden brown and cooked through, reading 165 degrees F when tested with a meat thermometer, about 4-5 minutes per side.
Step 12 -Sprinkle the chicken with the lemon pepper and serve.
