Ingredients

  • 1/4 cup butter
  • 1/8 cup all-purpose flour
  • 1 1/2 cups chicken broth
  • 2 1/2 cups chicken breast meat, skinless and boneless, cubed
  • 1 1/2 cups green peas
  • 1 1/2 cups canned mushrooms, drained
  • 1 cup carrots, cooked and sliced
  • 1/2 onion, chopped
  • 1/4 cup red bell pepper, chopped
  • 1 (16-ounce) can refrigerated buttermilk biscuits

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -In a saucepan over medium heat, melt the butter.

Step 3 -Stir the flour into the butter.

Step 4 -Stir the chicken broth into the flour mixture and until it thickens.

Step 5 -Add the chicken, the peas, the mushrooms, the carrots, the onion, and the bell pepper to the broth mixture, stirring to combine.

Step 6 -Bring the chicken mixture to a boil and cook until the meat reaches an internal temperature of 165 degrees F.

Step 7 -Pour the chicken mixture into a 9x13-inch baking dish.

Step 8 -Place the biscuits evenly over the top of the chicken mixture.

Step 9 -Bake the casserole until the biscuits are golden-brown, about 25-30 minutes.

Step 10 -Serve.
