Ingredients

  • For the breakfast tacos:
  • 1 pound bulk pork sausage
  • 1 (28-ounce) package frozen potatoes, thawed
  • 2 cups sharp cheddar cheese, shredded
  • 12 large eggs
  • 1/2 cup 2% milk
  • 1/4 teaspoon seasoned salt
  • 1/8 teaspoon pepper
  • 12 fajita-style flour tortillas, warmed
  • Optional toppings:
  • salsa, to taste
  • jalapeños, to taste, sliced
  • tomatoes, to taste, chopped
  • green onions, to taste, sliced
  • avocado, to taste, sliced
  • cilantro leaves, to taste

Directions

Step 1 -Grease a 4-5-quart slow cooker.

Step 2 -In a large skillet over medium heat, cook the sausage, while crumbling, until it is no longer pink, about 8-10 minutes. Drain the excess grease.

Step 3 -Layer the potatoes, the cooked sausage, and the cheese in the prepared slow cooker.

Step 4 -In a large bowl, whisk the eggs, the milk, the seasoned salt, and the pepper together, then pour it over the layers in the slow cooker.

Step 5 -Cover the slow cooker and cook the sausage mixture on low heat until the eggs are set and a food thermometer inserted into the center reads 160 degrees F, about 3 hours 45 minutes-4 hours 15 minutes.

Step 6 -Let the sausage mixture stand, about 10 minutes.

Step 7 -Add equal amounts of the sausage mixture to each of the tortillas.

Step 8 -Serve the tacos with your favorite toppings.
