Beauty is in the eye of the beholder... and well, we're quite passionate about this Beholder Burger. Biting into the perfectly toasted Hawaiian buns that embrace the tender onion-mushroom topping, the sweet-and-spicy sauce, and the melty cheese that are all atop the juicy, grilled hamburger patties is like writing a love letter to your taste buds... which is weird to think about, but they'll appreciate it. Everyone is sure to become obsessed with the Beholder Burger. The flavor is so captivating!
Ingredients
- For the spice blend:
- kosher salt, to taste
- 1 tablespoon Old Bay® seasoning
- 1 tablespoon paprika
- 1 tablespoon chili powder
- 1 tablespoon garlic salt
- For the sauce:
- 1 cup mayonnaise
- 1 cup ketchup
- 1/2 teaspoon yellow mustard
- 1 canned chipotle chile in adobo sauce, finely chopped
- For the onion-mushroom topping:
- 2 tablespoons extra-virgin olive oil
- 15 white button mushrooms, thinly sliced
- 1 small onion, thinly sliced
- kosher salt, to taste
- freshly ground black pepper, to taste
- For the burgers:
- vegetable oil, to taste, for greasing the grill grates
- 2 pounds ground beef chuck
- 4 slices Swiss cheese
- 4 sweet Hawaiian hamburger buns, split
Directions
Step 1 -Preheat a grill to medium heat.
Step 2 -In a small bowl, add the salt, the Old Bay seasoning, the paprika, the chili powder, and the garlic salt and stir to combine. Set the spice blend aside.
Step 3 -In a medium bowl, add the mayonnaise, the ketchup, the yellow mustard, the chopped chipotle chile, and 1 1/2 teaspoons of the prepared spice blend and whisk until it is smooth. Reserve the remaining spice blend for the beef patties.
Step 4 -Place the bowl in the refrigerator and chill the sauce until ready to use.
Step 5 -In a large skillet over medium-high heat, add the extra-virgin olive oil.
Step 6 -Add the mushrooms to the heated oil and cook, undisturbed, until they are browned on the bottom, about 2 minutes.
Step 7 -Add the onions to the mushrooms and season with the salt and the pepper. Stir to combine.
Step 8 -Reduce the heat to medium-low and cook the onion-mushroom mixture, stirring occasionally, until it is tender, about 10-12 minutes.
Step 9 -Transfer the skillet from the heat and cover to keep the onion-mushroom topping warm.
Step 10 -Evenly brush the vegetable oil on the grates of the preheated grill.
Step 11 -Evenly form the beef chuck into 4 (1-inch-thick) patties and generously season them with the reserved spice blend.
Step 12 -Grill the patties until the bottoms are sizzling and browned, about 5-6 minutes.
Step 13 -Flip the patties and cook until they reach an internal temperature of 145 degrees F for medium doneness, about 5 minutes.
Step 14 -Add 1 slice of the cheese to each of the patties and evenly top with the onion-mushroom topping. Grill the burgers until the cheese is melted, about 1 minute.
Step 15 -While the cheese is melting, add the split hamburger buns to the grill and toast them.
Step 16 -Top each of the toasted bottom buns with 1 of the patties, then drizzle the sauce over each of the patties.
Step 17 -Place the top buns over each of the patties.
Step 18 -Serve.
