Ingredients

  • 1 tablespoon red chili flakes
  • 2 tablespoons sesame oil
  • 1 red chile, deseeded and finely chopped
  • 2 cloves garlic, crushed
  • 1 (3/4-inch-long) piece ginger, finely chopped
  • 3 cups fine egg noodles or spaghetti, cooked
  • 1 tablespoon light soy sauce
  • 1 spring onion, chopped, plus more, to taste, for garnish
  • 2 tablespoons black vinegar
  • 1 tablespoon dark soy sauce
  • 1/4 cup fresh coriander or cilantro leaves

Directions

Step 1 -In a skillet over medium heat, add the red chili flakes and cook until they are toasted.

Step 2 -Add the sesame oil to the toasted red chili flakes and cook until it is heated.

Step 3 -Using a mortar and pestle, crush the fresh red chile pieces, the garlic, and the ginger together.

Step 4 -Add the chile mixture to the chili flake-oil mixture and cook, stirring frequently, until it becomes fragrant, about 5 minutes. Ensure it does not burn.

Step 5 -Add the cooked noodles, the light soy sauce, 1 of the chopped spring onions, the black vinegar, the dark soy sauce, and the coriander to the sauce mixture and toss to combine.

Step 6 -Serve the noodles garnished with the extra chopped spring onions.
