Ingredients

  • 12 eggs
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound bacon, cooked and chopped, divided
  • 2 cups cheddar cheese, shredded, divided
  • 2 jalapeños, seeded and diced, divided
  • fresh cilantro, optional, to taste, chopped

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Grease a 12 cup muffin tin.

Step 3 -In a large mixing bowl, whisk together the eggs, the milk, the salt, and the pepper.

Step 4 -Pour 1/2 of the bacon, 1/2 of the cheddar cheese, and 1/2 of the jalapeños into the prepared muffin cups.

Step 5 -Pour the egg mixture into the muffin cups, filling each cup about 1/2 full.

Step 6 -Top with the remaining bacon, the remaining cheddar cheese, and the remaining jalapeños.

Step 7 -Bake on the center rack for 20-25 minutes.

Step 8 -Top with the cilantro and serve!
