Ingredients
- 4 ripe bananas, cut into chunks
- 1 1/4 cups light brown sugar
- 1 stick butter, softened
- 1 extra-large egg
- 1/4 cup whole milk
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 9x5-inch loaf pan.
Step 3 -In a large, resealable plastic bag, add the bananas.
Step 4 -Seal the plastic bag and using your hands, mash and massage the bananas until well-mashed.
Step 5 -In a large bowl, add the brown sugar and the butter and use an electric handheld mixer on medium speed to beat until light and fluffy, about 1-2 minutes.
Step 6 -Cut a corner from the plastic bag used to mash the bananas.
Step 7 -Squeeze the mashed bananas into the butter mixture.
Step 8 -Add the egg, the milk, the cinnamon, and the vanilla to the banana mixture and beat on medium speed until well-combined.
Step 9 -Add the flour, the baking powder, the baking soda, and the salt to the banana mixture and mix on low speed just until a smooth batter forms, about 1 minute.
Step 10 -Pour the batter into the prepared loaf pan, spreading it out evenly.
Step 11 -Bake until the top is lightly browned and a toothpick inserted into the center comes out clean, about 40 minutes.
