Summertime needs sunshine, tropical drinks, and some fresh seafood. Coastal Crab Stick Salad certainly delivers on the latter with plenty of sweet and salty crab meat! Add in some sweet corn, crunchy cucumber, and hearty hard-boiled eggs and you have a refreshing salad that will whet your appetite and leave you wanting more. Coastal Crab Stick Salad is easy to make and wonderful to share and snack on!
Ingredients
- 1/2 cup rice
- 3 eggs, hard-boiled, peeled and chopped
- 11 ounces imitation crabmeat, cut into bite-sized pieces
- 1 English cucumber, chopped
- 1 (14.5-ounce) can corn, drained
- 3 tablespoons mayonnaise
- 3 tablespoons yogurt
- fresh dill, to taste, chopped
- 1/2 teaspoon ground black pepper
- 1 teaspoon salt
Directions
Step 1 -Cook the rice according to the package directions.
Step 2 -Allow the rice to cool.
Step 3 -Mix together the cooked rice, the eggs, the crabmeat, the cucumber, the corn, the mayonnaise, the yogurt, and the dill in a large bowl.
Step 4 -Season with the pepper and the salt.
Step 5 -Let the salad chill for at least 30 minutes.
Step 6 -Serve chilled.
