Ingredients
- 1 pound ground beef
- 1 can (10 ounces) enchilada sauce
- 1 cup salsa
- 6 (10 inch) flour tortillas
- 2 cups corn, fresh or frozen
- 4 cups cheddar cheese, shredded
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -In a large skillet over medium heat, cook the beef until no longer pink, then drain.
Step 3 -Add the enchilada sauce and salsa to the skillet, then set aside.
Step 4 -Grease a 9x13 inch baking dish.
Step 5 -Place 2 tortillas at the bottom (it’s ok if they overlap).
Step 6 -Take 1/3 of the beef mixture and spread it over the tortillas.
Step 7 -Add 1 cup of corn.
Step 8 -Sprinkle the top with cheese.
Step 9 -Repeat this process of layering until all of the ingredients are used.
Step 10 -Bake uncovered until the cheese is bubbly, for 30 minutes.
Step 11 -Broil at the end if you desire a slight browning of the cheese.
Step 12 -Serve hot.
