  • For the chicken:
  • 1 pound chicken breast, boneless and diced
  • 1 large egg
  • 3 tablespoons cornstarch
  • 2 tablespoons soy sauce
  • 2 teaspoons vegetable oil
  • sesame seeds, to taste
  • green onion, thinly sliced, to taste
  • For the sauce:
  • 3/4 cup chicken broth
  • 1 1/2 tablespoons cornstarch
  • 1/4 cup sugar
  • 3 tablespoons fresh lemon juice

Directions

Step 1 -In a bowl, combine the chicken, the egg, 3 tablespoons of the cornstarch, and the soy sauce.

Step 2 -Allow the chicken to marinate in the fridge for at least 15 minutes and up to 1 hour.

Step 3 -In a small bowl, mix the chicken broth, the remaining cornstarch, the sugar, and the lemon juice.

Step 4 -In a large skillet, heat the vegetable oil over medium-high heat.

Step 5 -Transfer the chicken from the marinade, allowing any excess to drip off.

Step 6 -Discard the marinade.

Step 7 -Add the chicken to the pan in batches and stir-fry until browned and cooked through at 165 degrees F internally, about 5 minutes.

Step 8 -Stir the sauce well to ensure the cornstarch is fully incorporated.

Step 9 -Pour the sauce mixture into the pan with the chicken and let simmer on low heat until thickened, about 3-4 minutes.

Step 10 -Garnish with the sesame seeds and the green onions and serve.
