Ingredients

  • 8 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon red pepper flakes
  • salt, to taste
  • freshly ground black pepper, to taste
  • 2 tablespoons butter
  • 1 1/4 cups yellow onion, chopped
  • 1 1/4 cups red bell pepper, chopped
  • 6 cups spinach, packed
  • 2 cups ham, chopped
  • 3 tablespoons parsley, chopped
  • 8 cups hearty Italian or French bread, cut into 3/4-inch-thick cubes, packed
  • 1 1/4 cups sharp white cheddar cheese

Directions

Step 1 -Coat a 9x13-inch baking dish with nonstick cooking spray.

Step 2 -In a large bowl, add the eggs, the milk, the heavy cream, the Dijon mustard, the red pepper flakes, the salt, and the black pepper and whisk to combine.

Step 3 -In a 12-inch skillet over medium-high heat, melt the butter.

Step 4 -Add the onions and the red bell peppers to the melted butter and sauté, stirring occasionally, until they are slightly golden-brown and tender, about 10 minutes.

Step 5 -Add the spinach to the onion-pepper mixture and sauté, stirring occasionally, until it is just wilted, about 1 minute.

Step 6 -Transfer the skillet to a wire rack. Add the ham and the parsley to the veggie mixture and toss to combine.

Step 7 -In the bottom of the prepared baking dish, spread 1/2 of the bread cubes and top with 1/2 of the ham mixture.

Step 8 -Sprinkle 1/2 of the cheese over the ham mixture layer.

Step 9 -Repeat the layers once, starting with the bread cubes and ending with the cheese.

Step 10 -Whisk the egg mixture again to combine and pour it over the casserole.

Step 11 -Gently press down on the top of the casserole to submerge the ingredients into the egg mixture.

Step 12 -Cover the baking dish with foil and place it in the refrigerator. Let the casserole marinate for at least 1 hour and up to overnight.

Step 13 -Preheat the oven to 350 degrees F.

Step 14 -Uncover the baking dish and bake the casserole until the center is set, about 50 minutes-1 hour.

Step 15 -Place the baking dish on a wire rack and let it rest, about 3-5 minutes.

Step 16 -Serve.
