Grandma's Favorite Fruit Cobbler is a mix of jammy, sweet, tangy, and floral blueberries and peaches, the fruits of the warm weather season, heightened with brown sugar and lemon juice, underneath buttery, flaky crust circles. Ingredients

  • 2 3/4 pounds peaches, halved lengthwise, pitted and cut into 3/4-inch-thick wedges
  • 1 cup blueberries
  • 2/3 cup granulated sugar, divided
  • 3 tablespoons cornstarch
  • 2 tablespoons light brown sugar, packed
  • 1 tablespoon lemon juice
  • 1 teaspoon fresh ginger, peeled and finely grated
  • salt, to taste
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1 cup plus 2 tablespoons heavy cream, plus more, to taste
  • 1 vanilla bean, halved lengthwise and seeds scraped
  • sanding sugar, to taste
  • vanilla ice cream, optional, to taste, for serving

Directions

Step 1 -Position the oven racks in the upper and lower third positions.

Step 2 -Preheat the oven to 375 degrees F.

Step 3 -In a large bowl, add the peaches, the blueberries, 1/3 cup of the granulated sugar, the cornstarch, the brown sugar, the lemon juice, the ginger, and the salt and stir to combine.

Step 4 -Transfer the fruit mixture to a 2-quart baking dish.

Step 5 -In a medium bowl add the flour, the baking powder, the salt, and the remaining granulated sugar and whisk to combine.

Step 6 -Cut the cold butter into the flour mixture until clumps about the size of small peas form.

Step 7 -In a bowl, add 1 cup plus 2 tablespoons of the heavy cream and the vanilla bean seeds and stir with a fork to combine.

Step 8 -Add the cream-vanilla mixture to the flour mixture and stir until a soft, sticky dough forms.

Step 9 -Slightly flatten out the dough, then using a biscuit cutter or the rim of a small bowl, divide the dough into 10 equal pieces.

Step 10 -Arrange the dough pieces over the filling in the baking dish.

Step 11 -Brush the dough pieces evenly with the extra heavy cream.

Step 12 -Sprinkle the dough pieces evenly with the sanding sugar.

Step 13 -Line a baking sheet with parchment paper.

Step 14 -Place the parchment-paper-lined baking sheet on the bottom rack. This will help catch any juices from the cobbler.

Step 15 -Bake the cobbler on the upper oven rack until the topping is golden-brown and the filling is bubbling, about 55 minutes-1 hour 10 minutes. If the topping is browning too quickly, cover the baking dish with foil.

Step 16 -Allow the cobbler to cool on a wire rack for 1 hour.

Step 17 -Serve topped with the ice cream.
