Grandpa's Favorite Chicken-Fried Steak features the classic crunchy coating, pan-fried to a golden-brown, enveloping a juicy, tender, beefy steak. Served alongside it? Why, a delicious country gravy, of course! It wouldn't be Grandpa's Favorite Chicken-Fried Steak without a hearty, rich gravy! Let the time-honored Southern dish charm you liked it charmed Grandpa!
Ingredients
- 1 1/4 cups all-purpose flour, divided
- 2 large eggs
- 1 1/2 cups 2% milk, divided
- 4 (6-ounce) beef cubed steaks
- 1 1/4 teaspoons salt, divided
- 1 teaspoon pepper, divided
- neutral oil, to taste
- 1 cup water
Directions
Step 1 -Place 1 cup of the flour in a shallow bowl.
Step 2 -In a separate shallow bowl, whisk the eggs and 1/2 cup of the milk until blended.
Step 3 -Sprinkle the steaks with 3/4 teaspoon of the salt and 3/4 teaspoon of the pepper.
Step 4 -Dip the steaks in the flour to coat both sides and shake off any excess.
Step 5 -Dip the steaks in the egg mixture and then into the flour again.
Step 6 -In a large cast-iron or other heavy skillet over medium heat, heat 1/4-inch of the oil.
Step 7 -Add the steaks to the hot oil and cook until golden-brown and the meat reaches an internal temperature of 160 degrees F, about 4-6 minutes per side.
Step 8 -Transfer the steaks from the pan and drain them on paper towels. Make sure to keep them warm.
Step 9 -Drain and discard all but 2 tablespoons of the cooking oil from the pan.
Step 10 -Stir in the remaining flour, the remaining salt, and the remaining pepper until smooth.
Step 11 -Cook and stir the gravy mixture over medium heat until golden-brown, about 3-4 minutes.
Step 12 -Gradually whisk in the water and the remaining milk.
Step 13 -Bring the gravy mixture to a boil and stir constantly until thickened, about 1-2 minutes.
Step 14 -Serve the gravy over the steaks.
