Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 pound extra-lean ground turkey
  • 1 teaspoon garlic, minced
  • 1/2 cup yellow pepper, diced
  • 1/2 cup onions, diced
  • 1 1/2 cups sweet potato, diced
  • red chili flakes, optional, to taste
  • salt, to taste
  • freshly ground black pepper, to taste
  • 1/2 cup mozzarella cheese, optional, shredded
  • fresh parsley, optional, for garnish

Directions

Step 1 -Heat a cast-iron skillet over medium-high heat. Add the olive oil and heat until the oil starts to shimmer.

Step 2 -Add the ground turkey and garlic to the skillet and use a wooden spoon to break up the turkey as it cooks.

Step 3 -Cook for about 5 minutes, stirring occasionally.

Step 4 -Add the yellow peppers and onions and cook until the onions are translucent, about 5 minutes.

Step 5 -Add the sweet potato, red chili flakes, salt, and pepper.

Step 6 -Put a lid on the skillet and continue to cook until the sweet potatoes are fork tender, continuing to stir occasionally, about 10-15 minutes.

Step 7 -Preheat the oven to 400 degrees F.

Step 8 -When the sweet potatoes are fork tender, sprinkle the mozzarella cheese evenly in the skillet.

Step 9 -Place the skillet in the oven until the cheese is melted, about 5-7 minutes.

Step 10 -Garnish with parsley and serve.
