The new year is on the horizon, and now is the perfect time to pick up some healthy habits. Wondering where to begin? May we present to you — Healthy Year Breakfast! They say breakfast is the most important meal of the day, and this dish will definitely help you start your day on the right foot. This Whole30© dish contains nourishing, fresh veggies like bell pepper, onion, spinach, and sun-dried tomatoes, plus eggs for some filling protein. Healthy Year Breakfast is hearty, nutritious, and most of all — delicious! What's not to love?
Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 small green bell pepper, diced
- 1 small red bell pepper, diced
- 1/2 small red onion, thinly sliced
- 2 cups baby spinach, packed
- 1/4 cup sun-dried tomatoes (not packed in oil), chopped
- 1 clove garlic, sliced
- 10 large eggs, beaten
- 1 teaspoon salt, plus more to taste
- freshly ground black pepper, to taste
- hot sauce, to taste
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -Heat the oil in a medium oven-safe nonstick skillet over medium-high heat.
Step 3 -Add the green bell pepper, the red bell pepper, and the onion and cook, stirring occasionally, until softened, about 6-7 minutes.
Step 4 -Add the spinach, the sun-dried tomatoes, and the garlic and cook, stirring frequently, until the spinach is just wilted and still vibrant green, about 1 minute.
Step 5 -Reduce the heat to low and add the eggs, 1 teaspoon of the salt, and the black pepper. Stir gently to distribute the vegetables.
Step 6 -Bake until the eggs are set, 13-15 minutes.
Step 7 -Let stand for 5 minutes, then slice into 6 pieces.
Step 8 -Serve with the hot sauce.
