Jerry, we have to tell you... these little guys are marvels! Jerry's German Dumplings are adorable and delicious puffs of potato goodness! Creamy, savory, tender, and delicately seasoned! And then they get smothered in a rich and nutty browned butter sauce! Yum! Jerry's German Dumplings will be replacing your typical pasta or potato side dish in a big hurry!
Ingredients
- For the dumplings:
- 3 pounds medium potatoes, peeled and quartered
- 12 cups water, plus more, to taste
- 1 cup all-purpose flour
- 3 large eggs, lightly beaten
- 2/3 cup dry breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon ground nutmeg
- For the browned butter sauce:
- 1/2 cup butter, cubed
- 1 tablespoon onion, chopped
- 1/4 cup dry breadcrumbs, toasted
- basil, optional, to taste, chopped, for garnish
Directions
Step 1 -In a Dutch oven, add the potatoes and enough of the extra water to just cover them.
Step 2 -Place the Dutch oven on the stovetop and bring the water to a boil.
Step 3 -Reduce the heat to low and simmer the potatoes, uncovered, until they are tender, about 15-20 minutes.
Step 4 -Drain the potatoes and transfer them to a large bowl.
Step 5 -Add the flour, the eggs, 2/3 cup of the breadcrumbs, the salt, and the nutmeg to the potatoes and mash to combine.
Step 6 -Shape the potato mixture into 16 (2-inch) balls.
Step 7 -In a clean Dutch oven over high heat, add 12 cups of the remaining water and bring it to a boil.
Step 8 -Carefully add the potato balls to the boiling water.
Step 9 -Reduce the heat to low and simmer the potato balls, uncovered, until a toothpick inserted into the center comes out clean, about 7-9 minutes.
Step 10 -While the dumplings cook, in a small, heavy saucepan over medium heat, add the butter and the onions and cook, while stirring constantly, until the butter is melted and reaches a rich golden-brown, about 5-7 minutes.
Step 11 -Transfer the browned butter mixture from the heat.
Step 12 -Add the remaining toasted breadcrumbs to the browned butter mixture and stir to combine.
Step 13 -Drizzle the dumplings evenly with the browned butter sauce.
Step 14 -Top with the basil and serve.
