Ingredients

  • 1/4 cup warm water, about 95 degrees F
  • 2 1/2 teaspoons dry active yeast
  • 1/3 cup granulated sugar, divided
  • 3/4 cup whole milk
  • 1/2 cup salted butter, melted and cooled, plus more, to taste, for greasing the dish
  • 1 teaspoon salt
  • 4 large eggs, divided
  • 4 1/2 cups unbleached all-purpose flour, plus more, to taste, for dusting the worksurface
  • 1 tablespoon oil, for greasing the bowl
  • 1 tablespoon room temperature water

Directions

Step 1 -In the bowl of a stand mixer, add 1/4 cup of the warm water, the yeast, and 1 tablespoon of the sugar and let it sit until it starts to foam, about 4-5 minutes. If it does not foam, repeat this step with fresh ingredients.

Step 2 -Add the milk, the remaining sugar, and 1/2 cup of the cooled, melted butter to the yeast mixture and mix well.

Step 3 -Add the salt and 3 of the eggs to the yeast mixture and mix until combined.

Step 4 -Gradually add 4 1/2 cups of the flour to the dough mixture, about 1/3 cup at a time, and mix until incorporated after each addition. The dough will be sticky.

Step 5 -Mix the dough until it separates from the side of the bowl.

Step 6 -Using the extra flour, lightly dust a clean, flat work surface. Transfer the dough to the surface and knead until it is soft, about 3-4 minutes.

Step 7 -Pour the oil in a bowl and spread it out evenly.

Step 8 -Place the dough in the oiled bowl, cover with plastic, and let it sit in a warm, dry area until it rises, about 1 hour 30 minutes.

Step 9 -Using the extra butter, grease a 9x13-inch baking dish.

Step 10 -Transfer the dough to a clean work surface and cut it into 12 pieces.

Step 11 -Roll the dough pieces into balls and place them in the prepared baking dish.

Step 12 -Cover the baking dish with a clean towel and let the rolls rise for 1 hour.

Step 13 -Preheat the oven to 350 degrees F.

Step 14 -In a small bowl, add 1 tablespoon of the room temperature water and the remaining egg and whisk to combine.

Step 15 -Brush the egg wash over the buns, then bake until they are golden, about 25-30 minutes.

Step 16 -Serve.
