Seared to juicy glory and jacketed in Italian herbs and spices, the chops themselves are coated in a dazzling sauce of herbs, balsamic vinegar, and honey dijon mustard. This sauce brings out the natural flavors of the pork and tastes like a starry night and a beautiful sunrise all at once! Midnight Pork takes less than half an hour to make so you can indulge in its food finery anytime!
Ingredients
- For the chops:
- 1 pound pork chops
- salt, to taste
- pepper, to taste
- Italian seasoning, to taste
- 1 tablespoon olive oil
- 1 tablespoon butter
- For the honey balsamic sauce:
- 2 tablespoons butter, divided
- 2 scallions, chopped
- 4 cloves garlic, chopped
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon fresh thyme, chopped
- 1/4 cup balsamic vinegar
- 1/4 cup honey
- 2 tablespoons honey dijon mustard
- salt, to taste
Directions
Step 1 -Generously season the pork chops with salt, pepper, and Italian seasoning.
Step 2 -On the stovetop, heat a large pan over medium-high heat.
Step 3 -Add the olive oil and 1 tablespoon butter to the hot pan.
Step 4 -Once the butter has melted and become bubbly, add the pork chops.
Step 5 -Sear the chops for 3 minutes on each side. Transfer the chops to a plate.
Step 6 -Reduce the heat to medium.
Step 7 -Add 1 tablespoon butter to the hot, empty pan.
Step 8 -Add the chopped scallions, garlic, rosemary, and thyme, and cook until fragrant, about 2 minutes.
Step 9 -Add the remaining 1 tablespoon butter, balsamic vinegar, and honey, cooking until well-incorporated, about 2 minutes.
Step 10 -Add the dijon mustard.
Step 11 -Taste the sauce for seasoning, adding salt as needed.
Step 12 -Add the pork chops back to the skillet and spoon the sauce over them.
Step 13 -Cook until the pork chops reach an internal temperature of 145 degrees F.
Step 14 -Serve!
