You know it's officially summertime when Mom's Famous Pea Salad makes the spread! Creamy and cool, this is our favorite way to eat our veggies when the weather gets warmer. There are tender peas and crispy onions mixed in with crunchy, smoky almonds and some tangy mayo to create the perfect summer side! Ah, summer and Mom's Famous Pea Salad go so deliciously together! We love them both so much!
Ingredients
- 2 (16-ounce) package frozen petite peas
- 6 ounces natural-smoke-flavored almonds, sliced
- 1 onion, finely chopped
- 1 cup mayonnaise
- ground black pepper, to taste
Directions
Step 1 -In a colander, add the frozen peas and rinse them under cold water until they have thawed.
Step 2 -Drain the water and pour the thawed peas into a large bowl.
Step 3 -Add the almonds and the onions to the thawed peas and mix well.
Step 4 -Fold the mayonnaise and the black pepper into the pea mixture until the peas are evenly coated.
Step 5 -Cover the bowl and refrigerate the pea salad until ready to serve.
Step 6 -Serve.
