New Hampshire Pancakes

The Granite State might get cold in the winter, but it knows how to make the most warm and comforting breakfasts! New Hampshire Pancakes are fluffy and golden treats loaded up with native sweet-and-tart blueberries like little constellations of flavor! They're a breeze to whip up and so, so good topped with maple syrup (you have to do maple syrup with New Hampshire Pancakes! It's an unspoken rule!)! You'll be happy all day after a morning that starts with these on the table!

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • salt, to taste
  • 1 egg
  • 2 tablespoons unsalted butter, melted, plus more, to taste, softened
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 1/2 cups blueberries, fresh or frozen, do not thaw if frozen
  • maple syrup, to taste, for serving

Directions

Step 1 -Preheat the oven to 200 degrees F.

Step 2 -Place an oven-safe wire rack in a baking pan.

Step 3 -In a bowl, add the flour, the white sugar, the baking powder, the baking soda, and the salt and whisk to combine.

Step 4 -In a separate bowl, add the egg, 2 tablespoons of the melted butter, the milk, the vanilla extract, and the vinegar and whisk to combine.

Step 5 -Add the dry ingredients to the wet ingredients and whisk until just combined.

Step 6 -Add the blueberries to the batter and fold to combine.

Step 7 -In a nonstick skillet over medium-high heat, add the extra butter.

Step 8 -Dollop a heaping 1/4 cup of the batter onto the prepared skillet and quickly nudge it into a 5-inch-wide circle.

Step 9 -Cook the pancake until a few bubbles appear and the underside is mostly golden, about 1 minute 30 seconds.

Step 10 -Flip the pancake and cook until the pancake center springs back when poked and the underside is golden, about 1 minute.

Step 11 -Transfer the cooked pancake to the prepared wire rack and keep it warm in the oven.

Step 12 -Repeat until all of the batter is used, using as much of the extra butter as needed to grease the pan before each batch. Be sure not to stack the pancakes on the wire rack while keeping them warm in the oven.

Step 13 -Serve topped with the maple syrup.
