  • 2 tablespoons vegetable oil
  • 2 large onions, finely chopped
  • 1 pound ground beef
  • 2 (15-ounce) cans Boston-style baked beans
  • 2 medium tomatoes, finely chopped
  • 1/4 cup packed light brown sugar
  • 1 tablespoon Dijon mustard
  • 1 1/4 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper
  • 5 slices bacon

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Coat a 2-quart casserole dish with cooking spray.

Step 3 -In a large skillet over medium heat, heat the oil.

Step 4 -Add the onion to the hot oil and cook until softened, about 5 minutes.

Step 5 -Add the beef and cook, while crumbling the meat, until completely browned, about 7-10 minutes.

Step 6 -In a large bowl, add the beef mixture along with the beans, the tomatoes, the brown sugar, the Dijon mustard, the salt, and the pepper, mixing well to combine.

Step 7 -Pour the beef mixture into the prepared casserole dish and arrange the bacon slices on top.

Step 8 -Cover the casserole dish with a lid or aluminum foil.

Step 9 -Bake until thick and bubbly, about 45 minutes.

Step 10 -Uncover the dish and preheat the broiler.

Step 11 -Broil until the bacon is crisp, about 1-2 minutes.

Step 12 -Serve.
