Ingredients

  • 4 (6-ounce) chicken breast halves, boneless and skinless
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon canola oil
  • 1/4 cup prepared pesto
  • 1/2 pound fresh mozzarella cheese, cut into 8 slices
  • 2 plum tomatoes, sliced
  • fresh basil, optional, to taste, sliced, for garnish

Directions

Step 1 -Preheat the oven to 400 degrees F.

Step 2 -Grease a 2-quart baking dish.

Step 3 -Season the chicken halves with the salt and the pepper.

Step 4 -In a large skillet over medium-high heat, add the oil.

Step 5 -Add the chicken halves to the hot oil and brown them on both sides, about 3-4 minutes per side.

Step 6 -Transfer the chicken halves to the prepared baking dish.

Step 7 -Top the chicken halves evenly with the pesto, the mozzarella, and the tomatoes.

Step 8 -Bake until the chicken halves reach an internal temperature of 165 degrees F, about 15-18 minutes.

Step 9 -Serve garnished with the basil.
