  • 2 cups whole milk
  • 1 cup plain yellow cornmeal
  • 2 tablespoons vegetable oil
  • 2 cups yellow onion, chopped
  • 1 tablespoon garlic, minced
  • 1 large green bell pepper, chopped
  • 1 pound ground beef
  • 2 cups tomato sauce
  • 1 cup frozen or drained canned corn
  • 1 cup canned sliced black olives, drained
  • 2 tablespoons plus 1 teaspoon chili powder
  • 2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 6 ounces extra-sharp cheddar cheese, shredded
  • sour cream, optional, to taste, for serving
  • fresh cilantro, optional, to taste, roughly chopped, for serving

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Coat a 9x13-inch glass or ceramic baking dish with nonstick cooking spray.

Step 3 -In a large bowl, add the milk and the cornmeal and stir to combine. Set the cornmeal mixture aside.

Step 4 -In a large skillet over medium-high heat, add the vegetable oil.

Step 5 -Add the onions, the garlic, and the bell peppers to the hot oil and cook, while stirring occasionally, until the vegetables are softened, about 8-9 minutes.

Step 6 -Add the ground beef to the vegetable mixture and cook, while crumbling the meat, until the beef is no longer pink, about 7 minutes.

Step 7 -Add the beef mixture to the cornmeal mixture and stir until they are combined.

Step 8 -Add the tomato sauce, the corn, the olives, the chili powder, the salt, and the black pepper to the beef mixture and stir to combine.

Step 9 -Pour the beef mixture into the prepared baking dish.

Step 10 -Bake until the center is set and the edges have browned, about 55 minutes.

Step 11 -Transfer the baking dish from the oven.

Step 12 -Sprinkle the tamale pie with the cheddar cheese.

Step 13 -Bake until the cheese melts, about 3-4 minutes.

Step 14 -Serve the tamale pie topped with the sour cream and the cilantro.
