Ingredients
- 6 tablespoons extra-virgin olive oil, divided
- 1 red onion, thinly sliced into half-moons
- 1 teaspoon balsamic vinegar
- 1 teaspoon brown sugar
- kosher salt, to taste
- black pepper, to taste
- 1 pound skirt steak
- 2 tablespoons red wine vinegar
- 1 (5-ounce) container baby arugula
- 1/2 pint red grape tomatoes, halved lengthwise
- 1/2 pint yellow grape tomatoes, halved lengthwise
- 2 ounces feta, crumbled
Directions
Step 1 -In a large skillet over medium-high heat, heat 1 tablespoon of the olive oil.
Step 2 -Add the red onion to the oil and cook until soft, about 5 minutes.
Step 3 -Add the balsamic vinegar and the brown sugar to the onion and cook until the onion is very soft, about 2 minutes.
Step 4 -Season the onion mixture with the salt and the pepper.
Step 5 -Transfer the onion mixture to a bowl and allow it to cool.
Step 6 -Rub a grill pan with 1 tablespoon of the olive oil.
Step 7 -Heat the grill pan over high heat.
Step 8 -Season the skirt steak generously with the salt and the pepper.
Step 9 -Grill the steak until the internal temperature reads medium-rare, about 3 minutes per side.
Step 10 -Transfer the steak to a cutting board and let it sit for 5 minutes.
Step 11 -In a large bowl, whisk together the red wine vinegar and the remaining olive oil.
Step 12 -Season the vinegar mixture with the salt and the pepper.
Step 13 -Add the arugula, the red grape tomatoes, and the yellow grape tomatoes to the bowl with the vinaigrette and toss gently to combine.
Step 14 -Thinly slice the steak across the grain diagonally.
Step 15 -Divide the salad mixture among 4 plates.
Step 16 -Top each salad with the caramelized onions, the steak, and the feta.
Step 17 -Serve.
