  • 1 (1-pound) package hot ground pork sausage
  • 1 (30-ounce) package frozen shredded hash browns
  • 2 teaspoons kosher salt, divided
  • 1 teaspoon black pepper, divided
  • 6 ounces sharp cheddar cheese, shredded, divided
  • 6 large eggs, lightly beaten
  • 1 cup whole milk
  • 1 tablespoon fresh flat-leaf parsley, chopped

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Coat a 9x13-inch baking dish with cooking spray.

Step 3 -Cook the sage ground sausage and the hot ground sausage in a large skillet over medium-high heat, stirring often, until they are crumbled and browned, about 10 minutes.

Step 4 -Transfer the sausage to a paper-towel-lined plate to drain.

Step 5 -In batches, cook the hash browns in a large nonstick skillet according to the package directions, but without adding any salt (if the directions call for it).

Step 6 -Sprinkle the hash browns with 1 teaspoon of the salt and 1/2 teaspoon of the pepper.

Step 7 -Stir the sausage mixture, the hash browns, and 1 cup of the cheese into a bowl.

Step 8 -Spoon the sausage mixture into the prepared baking dish.

Step 9 -Whisk the eggs, the milk, the remaining salt, and the remaining pepper together in a bowl.

Step 10 -Pour the egg mixture over the sausage mixture and sprinkle it with the remaining cheese.

Step 11 -Bake until the eggs are set, about 30 minutes.

Step 12 -Sprinkle the casserole with the parsley and serve.
