Ingredients

  • 2 tablespoons oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • coarse salt, to taste
  • pepper, to taste
  • 1 1/2 teaspoons dried thyme or oregano
  • 1 (28-ounce) can whole tomatoes
  • 1 (28-ounce) can crushed tomatoes
  • 1 (32-ounce) package refrigerated cheese ravioli
  • 1 1/2 cups mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated

Directions

Step 1 -Preheat the oven to 425 degrees F.

Step 2 -Heat the oil in a large saucepan over medium-high heat.

Step 3 -Add the onions, the garlic, the salt, and the pepper.

Step 4 -Cook, stirring frequently, until the onions are softened, about 5 minutes.

Step 5 -Add the thyme, the whole tomatoes and their juices, and the crushed tomatoes and their juices.

Step 6 -Bring the sauce mixture to a boil.

Step 7 -Reduce the heat and allow the sauce mixture to simmer, breaking up the whole tomatoes with a spoon.

Step 8 -Reduce the sauce to about 5 cups, about 20-25 minutes.

Step 9 -Cook the ravioli in a pot of boiling water just until they float, about 3-5 minutes. Drain the ravioli.

Step 10 -Toss the sauce and the raviolis together in a casserole dish.

Step 11 -Top the ravioli swith the mozzarella and the parmesan cheese.

Step 12 -Bake for 20-25 minutes.

Step 13 -Serve hot!
