Ingredients

  • 2 pounds extra lean ground beef
  • 2 green bell peppers, diced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 tablespoons brown sugar
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • cayenne pepper, to taste
  • 2 cups chicken broth
  • 1 cup ketchup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 cup cheddar cheese, shredded, divided
  • toast, to taste, for serving

Directions

Step 1 -In a heavy pot, add the ground beef, the bell peppers, the onion, the garlic, the flour, the brown sugar, the salt, the pepper, and the cayenne pepper.

Step 2 -Place the pot over medium-high heat, stirring to break up the beef mixture.

Step 3 -While stirring, cook until most of the moisture has evaporated and the beef mixture is beginning to brown, about 15 minutes.

Step 4 -Stir in the chicken broth, the ketchup, the Dijon mustard, and the Worcestershire sauce.

Step 5 -Mix well, bring the beef mixture to a simmer, and then reduce the heat to medium.

Step 6 -Continue to cook, stirring occasionally, until the beef mixture is thick, about 45 minutes.

Step 7 -Set an oven rack 6 inches from the heat and preheat the oven's broiler.

Step 8 -Transfer the beef mixture to an oven-proof saucepan.

Step 9 -Top the beef mixture with 1/2 of the shredded cheese.

Step 10 -Poke the cheese down into the beef mixture with a fork and stir lightly.

Step 11 -Top the beef-cheese mixture with the remaining cheese.

Step 12 -Place the pan under the broiler and broil until the cheese is browned and the beef mixture is hot and bubbly, about 5 minutes.

Step 13 -Serve with the toast.
