Ingredients

  • 1 cup olive oil
  • 2/3 cup lemon juice
  • 2 teaspoons garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper, plus more, to taste
  • 1 medium onion, diced
  • 6 (6-8-ounce) chicken breasts, boneless and skinless

Directions

Step 1 -In a bowl, add the olive oil, the lemon juice, the garlic, the salt, and 1/2 teaspoon of the black pepper and whisk to combine.

Step 2 -Add the diced onions to the olive oil mixture and whisk to combine.

Step 3 -In a gallon-size, resealable plastic bag, add the chicken breasts and the olive oil mixture.

Step 4 -Seal the bag and massage lightly to ensure the chicken breasts are evenly coated.

Step 5 -Allow the chicken to marinate for at least 8 hours and up to overnight.

Step 6 -Preheat the grill to medium heat.

Step 7 -Add the marinated chicken breasts to the hot grill and sprinkle them with the extra black pepper.

Step 8 -Cook the chicken breasts, flipping them once, until they reach an internal temperature of 165 degrees F, about 10-15 minutes.

Step 9 -Serve.
