What a lovely taste of sunshine in this succulent dish! Sunshine Pork Loin is a bright and cheery pork loin roast, guaranteed to be juicy and savory, with a touch of natural sweetness. Where is all that brightness coming from? A thick, tangy, electric orange sauce that is brushed over the pork and served alongside it! Sunshine Pork Loin will brighten up your day!
Ingredients
- 1 teaspoon salt
- 1 clove garlic, minced
- 1/4 teaspoon dried thyme
- 1/4 teaspoon ground ginger
- 1/4 teaspoon black pepper
- 1 (5-pound) pork loin roast, boneless
- 1 cup orange juice
- 1/4 cup brown sugar, packed
- 1 tablespoon Dijon mustard
- 1/3 cup cold water
- 1 tablespoon cornstarch
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Place a wire rack in a shallow roasting pan.
Step 3 -In a small bowl, add the salt, the garlic, the thyme, the ginger, and the black pepper and stir to combine.
Step 4 -Rub the seasoning mixture over the pork lion.
Step 5 -Place the pork loin, fat-side up, on the prepared rack.
Step 6 -Roast the pork loin, uncovered, for 1 hour.
Step 7 -In a saucepan over medium heat, add the orange juice, the brown sugar, and the mustard and whisk to combine.
Step 8 -In a small bowl, add the water and the cornstarch and whisk until combined.
Step 9 -Add the slurry to the orange juice mixture in the saucepan and stir to combine.
Step 10 -Bring the glaze mixture to a boil and cook, while stirring, until thickened, about 2 minutes.
Step 11 -Reserve 1 cup of the glaze in the refrigerator.
Step 12 -Transfer the pork loin from the oven and brush the top of it with 1/2 of the remaining glaze.
Step 13 -Transfer the pork loin to the oven and roast, while brushing it occasionally with the remaining glaze, until it reaches an internal temperature of 145 degrees F, about 20-40 minutes.
Step 14 -Transfer the pork loin from the oven and let it rest for 10 minutes.
Step 15 -Reheat the reserved glaze in the microwave and drizzle over the top of the pork loin.
Step 16 -Slice and serve.
