The perfect breakfast is often a balance between keeping things easy and breezy and wanting to indulge in all the breakfast fantasies you've been craving! One way to enjoy some morning luxury without breaking a sweat is with Super Simple Pancakes. These are light, fluffy, golden discs of deliciousness. They're ready in less than half an hour and require nothing more than mixing, pouring, and frying-up! Bam! Done! Grab your favorite breakfast toppings, because the only thing Super Simple Pancakes are missing is whatever you love most with pancakes!
Ingredients
- 4 cups all-purpose flour
- 1/4 cup granulated sugar
- 4 teaspoons baking powder
- 2 teaspoons baking soda
- 1 teaspoon kosher salt
- 1 1/2 cups milk, plus more, to taste
- 1 egg
- 1 teaspoon vanilla extract, optional
- butter, to taste
Directions
Step 1 -Preheat a griddle to 325 degrees F or heat a skillet over medium-high heat.
Step 2 -In a large bowl, whisk the flour, the sugar, the baking powder, the baking soda, and the salt together.
Step 3 -In a large bowl, mix 2 cups of the pancake mixture, the milk, the egg, and the vanilla together with a wooden spoon until most but not all of the lumps are gone and the batter is smooth and forms a pourable consistency. If it is too thick, add more of the milk.
Step 4 -Coat the griddle with the butter.
Step 5 -Pour 1/4 cup of the batter in circles on the hot griddle and cook until bubbles appear, about 2 minutes.
Step 6 -Flip the pancakes and cook just until lightly browned on the bottom, about 1 minute.
Step 7 -Transfer the cooked pancakes to a plate and stack them to help keep warm.
Step 8 -Repeat with the remaining batter.
Step 9 -Serve immediately.
