Ingredients
- 2 sticks unsalted butter, room temperature
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs, beaten
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon kosher salt
- 1 cup cornflakes
- 1 cup rolled oats
- 1 cup semisweet chocolate chips
- 1/2 cup shredded coconut
- 1/2 cup dried blueberries
- 1/2 cup dried cherries
- 1 cup pecans, chopped
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 9x13-inch baking pan.
Step 3 -In a large mixing bowl, add the butter, the granulated sugar, and the brown sugar and using an electric hand mixer on medium speed, beat to combine.
Step 4 -Add the eggs and the vanilla to the butter mixture and beat to combine.
Step 5 -Add the flour, the baking powder, the baking soda, the cinnamon, and the salt to the butter mixture and stir and mix until just combined into a dough.
Step 6 -Add the cornflakes, the oats, the chocolate chips, the coconut, the blueberries, the cherries, and the pecans and fold and stir until just combined.
Step 7 -Spread the dough evenly into the prepared baking pan.
Step 8 -Bake until the edges are set and the dough is lightly browned on top, about 25 minutes.
Step 9 -Allow the bars to cool for 15 minutes.
Step 10 -Slice the bars into serving-sized pieces and serve.
