Ingredients

  • For the casserole:
  • 2 (9-ounce) bags frozen steam-able sweet potatoes or 5 whole fresh sweet potatoes
  • 2 tablespoons brown sugar
  • 1 egg
  • 1/2 cup milk
  • 3 tablespoons butter, melted
  • 2 tablespoons maple syrup
  • For the topping:
  • 3 tablespoons butter, melted
  • 1/4 cup brown sugar
  • 1 cup pecans, chopped
  • 1 1/2 cups marshmallows

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -Cook the steam-able sweet potatoes according to the package directions or boil the sweet potatoes until fork-tender.

Step 3 -In a small bowl, mash the sweet potatoes.

Step 4 -In a large bowl add 2 tablespoons of the brown sugar, the egg, the milk, 3 tablespoons of the melted butter, and the maple syrup and whisk until well-blended.

Step 5 -Add the sweet potatoes to the brown sugar mixture and mix well to combine.

Step 6 -Transfer the sweet potato mixture into a 9x13-inch casserole dish.

Step 7 -In a separate bowl, add the remaining butter, the remaining brown sugar, and the pecans and whisk to combine.

Step 8 -Spread the pecan mixture on top of the sweet potato mixture.

Step 9 -Evenly sprinkle the marshmallows on top of the sweet potatoes.

Step 10 -Bake until the marshmallows are melted and golden on top, about 30 minutes.

Step 11 -Serve hot.
