Fluffy eggs, tender tater tots, crisp bacon, melty cheese... yes indeed, Tot-of-the-Morning Bake has all the good stuff rolled up in one delicious dish! You'll never need to wonder what to make for breakfast again; you'll only need to know where your fork and plate are!

Ingredients

  • 1 pound bacon, diced
  • 1 (32-ounce) package frozen tater tots or potato nuggets
  • 12 eggs
  • 1/2 cup milk
  • salt, to taste
  • 1/8 teaspoon ground black pepper
  • 2 cups cheddar cheese, shredded
  • fresh herbs, optional, of your choice, to taste, for garnish

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -In a large skillet over medium-high heat, cook the bacon, turning it occasionally, until it is evenly browned, about 5-8 minutes.

Step 3 -Drain the bacon on paper towels.

Step 4 -Spread the bacon onto the bottom of a 9x13-inch baking dish, trying to cover as much of the bottom as possible.

Step 5 -Spread the tater tots over the bacon.

Step 6 -Beat the eggs, the milk, the salt, and the pepper together in a bowl.

Step 7 -Pour the egg mixture over the tater tots.

Step 8 -Top the casserole with the cheddar cheese.

Step 9 -Bake until hot in the center, about 1 hour.

Step 10 -Serve garnished with the fresh herbs.
