Ingredients
- For the crumble topping:
- 1/2 cup all-purpose flour, spooned and leveled
- 3/4 cup light brown sugar, packed
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold, cut into cubes
- 1 cup old-fashioned rolled oats
- For the filling:
- 5 cups peaches, pitted and sliced
- 1/3 cup granulated sugar
- 1/4 cup all-purpose flour, spooned and leveled
- vanilla ice cream, optional, to taste, for serving
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat a 9-inch pie plate or an 8-9-inch square baking dish with nonstick cooking spray.
Step 3 -In a large mixing bowl, add 1/2 cup of the flour, the light brown sugar, the cinnamon, and the salt and whisk until well-combined.
Step 4 -Add the cold butter cubes to the flour mixture and using a pastry cutter or a fork, cut the butter into the flour mixture until it starts to come together into a crumble.
Step 5 -Add the oats to the crumble mixture and stir to combine.
Step 6 -Transfer the crumble to the refrigerator until ready to use.
Step 7 -In a large mixing bowl, add the peaches, the granulated sugar, and the remaining flour and toss and stir to coat.
Step 8 -Scoop the peach mixture into the prepared pie plate or baking dish.
Step 9 -Top the peach mixture with the crumble mixture.
Step 10 -Bake until the topping is lightly golden-brown and the juices are bubbling around the edges, about 40-50 minutes.
Step 11 -Transfer the crisp to a wire rack to cool slightly.
Step 12 -Serve with the ice cream.
