Some days are busy and don't get the same breakfast glory as other days. The middle of the week might feel like a hurdle more than just a hump. But Wednesday's Waffles will make that hump feel like a smooth road to sweetness! It doesn't get any easier than pulling out those staple items from your pantry to create a fluffy, golden-brown waffle that is sure to make the mid-week mood feel a little brighter. Add your favorite syrup, fruit, and toppings and Wednesday's Waffles will definitely make you feel like you are one day closer to the weekend.
Ingredients
- For the waffles:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 2 large eggs, yolks and whites separated
- 1 2/3 cups milk
- 1/3 cup butter, melted, can substitute vegetable oil
- 1 teaspoon vanilla extract
- For serving:
- butter, to taste
- fresh blueberries, to taste
- maple syrup, to taste
Directions
Step 1 -Grease a waffle iron and preheat it to 400 degrees F.
Step 2 -In a large bowl, add the flour, the baking powder, the sugar, and the salt and whisk to combine.
Step 3 -In a small bowl, add the egg yolks, the milk, 1/3 cup of the butter, and the vanilla extract and whisk to combine. Set it aside.
Step 4 -In a medium bowl with an electric mixer on medium-high speed, add the egg whites and beat until stiff peaks form.
Step 5 -Add the egg yolk mixture to the flour mixture and stir to combine.
Step 6 -Add the egg whites to the batter mixture and gently fold to combine.
Step 7 -With a large spoon, evenly drop the batter mixture onto the waffle iron until most of the wells are covered.
Step 8 -Close the lid of the waffle iron and cook until golden-brown, about 3-5 minutes.
Step 9 -Repeat the cooking process until all the batter is used.
Step 10 -Serve the waffles topped with the extra butter, the blueberries, and the syrup.
