Ingredients

  • 1/3 cup all-purpose flour
  • 3 chicken breasts, boneless and skinless, cut in half horizontally
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 2 tablespoons extra-virgin olive oil
  • 4 tablespoons butter
  • 1 (8-ounce) carton cremini mushrooms, sliced
  • 1/2 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup white wine
  • 1/4 cup low-sodium chicken broth
  • 1 lemon, juiced
  • 1/4 cup heavy cream
  • fresh parsley, to taste, chopped, for garnish
  • lemon wedges, to taste, for garnish

Directions

Step 1 -In a shallow bowl, add the flour.

Step 2 -Season the chicken breast halves with the salt and the black pepper.

Step 3 -Dredge the seasoned chicken halves into the flour and coat both sides, shaking off any of the excess.

Step 4 -In a large skillet over medium-high heat, add the olive oil.

Step 5 -Add the coated chicken halves to the hot oil and cook until they are deeply golden and reach an internal temperature of 165 degrees F, about 3 minutes per side.

Step 6 -Transfer the fried chicken halves to a plate.

Step 7 -Reduce the heat to medium. Add the butter, the mushrooms, and the onions to the skillet and cook, stirring occasionally, until the veggies are golden, about 8 minutes.

Step 8 -Add the garlic to the veggie mixture and cook until it is fragrant, about 1 minute.

Step 9 -Add the white wine, the chicken broth, the lemon juice, the salt, and the black pepper to the veggie mixture and stir to combine.

Step 10 -Let the sauce simmer until it has slightly reduced and thickened, about 3 minutes.

Step 11 -Add the heavy cream to the sauce and stir to combine. Cook until it is heated through, about 1 minute.

Step 12 -Add the chicken halves to the sauce, spooning it over them to coat completely.

Step 13 -Plate the chicken halves and drizzle with the sauce.

Step 14 -Garnish the chicken halves with the parsley and the lemon wedges and serve.
