  • 4 quarts water
  • 1 teaspoon salt, divided
  • 1 (16-ounce) box elbow macaroni or cavatappi noodles
  • 1 cup heavy cream
  • 6 ounces cheddar cheese, shredded
  • 3/4 cup parmesan cheese, shredded
  • 1/2 teaspoon pepper

Directions

Step 1 -In a large pot bring the water to a boil.

Step 2 -Season the water with 1/2 of the salt.

Step 3 -Cook the pasta in boiling water according to the package instructions until al dente.

Step 4 -While the pasta is cooking, heat the cream in a heavy saucepan or cast-iron skillet over medium heat until the cream begins to bubble.

Step 5 -Add the cheddar, the parmesan cheese, the remaining salt, and the pepper.

Step 6 -Stir the cheese sauce until bubbly and the cheese has melted, about 5-7 minutes while stirring often.

Step 7 -Once the noodles are cooked, add the drained pasta to the cheese sauce and stir until combined.
