Ingredients
- 1 tablespoon extra-virgin olive oil
- 1/2 cup onion, chopped
- 1 medium green bell pepper, chopped
- 1 pound lean ground beef
- 3 cups cauliflower florets, cut to bite-sized pieces
- 3 cloves garlic, minced
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon ground chipotle
- 1 (15-ounce) can no-salt-added petite diced tomatoes
- 2 cups extra sharp cheddar cheese, shredded
- 1/3 cup pickled jalapeños, sliced
Directions
Step 1 -Position a rack in the upper third of the oven and preheat the broiler on high heat.
Step 2 -In a large, broiler-safe skillet over medium heat, add the olive oil.
Step 3 -Add the onions and the bell peppers to the heated olive oil and cook, stirring occasionally, until they have softened, about 5 minutes.
Step 4 -Add the beef and the cauliflower to the onion mixture and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes.
Step 5 -Add the garlic, the chili powder, the cumin, the oregano, the salt, and the ground chipotle to the beef mixture and cook until the garlic is fragrant, about 1 minute.
Step 6 -Add the tomatoes and their juices to the beef mixture then bring to a simmer, stirring occasionally.
Step 7 -Cook the beef mixture until the liquid is reduced and the cauliflower is tender, about 3 minutes.
Step 8 -Transfer the skillet from the heat and evenly sprinkle the beef mixture with the cheese and the jalapeños.
Step 9 -Broil the beef casserole until the cheese is melted and browned in spots, about 2-3 minutes.
Step 10 -Serve.
