  • For the cake:
  • 3 cups all-purpose flour, sifted
  • 1/4 cup sugar
  • 2 tablespoons ground cinnamon
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 2 medium apples, peeled and chopped
  • 1 (12-ounce) bottle beer, room temperature, can substitute unsweetened apple juice
  • 1/4 cup butter, melted
  • For the icing:
  • 2 cups confectioners' sugar
  • 3 tablespoons 2% milk
  • 1/2 teaspoon vanilla extract

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Line an 8-inch square baking pan with parchment, letting two sides overhang the sides.

Step 3 -In a large bowl, whisk together the flour, the sugar, the cinnamon, the baking powder, and the salt.

Step 4 -Add the apples and the beer to the dry mixture, mixing until it is just blended. Be careful not to overmix. The batter will be thick.

Step 5 -Transfer the batter to the prepared baking pan.

Step 6 -Bake until a toothpick inserted into the center comes out clean, about 40-45 minutes.

Step 7 -Carefully lifting with the parchment paper, immediately transfer the cake out of the pan.

Step 8 -Brush all sides with the melted butter.

Step 9 -Allow the cake to cool.

Step 10 -While the cake is cooling, in a small bowl, combine the confectioners' sugar, the milk, and the vanilla extract.

Step 11 -Spread or drizzle the icing over the cooled cake.

Step 12 -Serve.
