BBQ Chicken Tacos are fusion food we can get behind. The sweet, tangy barbecue sauce on the chicken mixes with the cooling, creamy cilantro lime sauce for a truly elite flavor profile. Not to mention the warm corn tortillas it all comes wrapped in. BBQ Chicken Tacos are worth starting up the grill for on a weeknight.
Ingredients
- For the chicken:
- 2 chicken breasts or thighs, boneless and skinless
- 2/3 cup barbecue sauce, divided
- For the creamy cilantro lime sauce:
- 1/2 cup plain Greek yogurt
- 3 tablespoons fresh cilantro, chopped
- 1 tablespoon lime juice
- 1/4 teaspoon salt
- For the tacos:
- 15 corn tortillas
- 1 cup cherry tomatoes, chopped
- 1/3 cup red onion, chopped
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (15-ounce) can corn, drained
- 1 avocado, sliced
- fresh cilantro, optional, chopped, for topping
Directions
Step 1 -Add the chicken and 1/3 cup of the barbecue sauce to a resealable bag, massaging so the chicken is fully coated.
Step 2 -Refrigerate for 1-3 hours.
Step 3 -Combine the Greek yogurt, 3 tablespoons of the cilantro, the lime juice, and the salt, mixing until a smooth sauce forms.
Step 4 -Refrigerate the sauce until ready to serve.
Step 5 -Preheat the grill and lightly grease it with cooking spray.
Step 6 -Add the chicken to the grill and cook it until it is cooked through to 165 degrees F, about 4-5 minutes on each side, flipping once.
Step 7 -Transfer the chicken to a cutting board, baste it with the remaining barbecue sauce, and allow it to rest for 5 minutes before chopping.
Step 8 -Warm the tortillas on the grill or in a hot skillet.
Step 9 -Add a spoonful of the chopped chicken, the cherry tomatoes, the red onion, the black beans, the corn, and the avocado to each of the warm tortillas.
Step 10 -Drizzle them with the creamy cilantro lime sauce.
Step 11 -Garnish them with the remaining fresh cilantro and serve!
