Ingredients
- 1 pound fresh jumbo scallops (about 10-12 scallops), patted dry
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 tablespoons vegetable oil
- 1/4 cup butter
- 2 cloves garlic, crushed
- 1 teaspoon Italian seasoning
- 1 teaspoon parsley, finely chopped, for garnish
- 2 lemon wedges, for serving
Directions
Step 1 -Evenly season the scallops with the salt and the pepper.
Step 2 -In a cast-iron skillet over medium-high heat, add the oil and heat until it begins to sizzle and shimmer.
Step 3 -Use tongs to place the seasoned scallops in the hot oil and cook, undisturbed, about 2 minutes.
Step 4 -Use the tongs to flip the scallops over, then add the butter and the garlic to the skillet.
Step 5 -Evenly sprinkle the scallops with the Italian seasoning, then cook, while constantly basting them with the melted butter, about 2 minutes.
Step 6 -Transfer the cooked scallops to a serving plate and evenly sprinkle them with the parsley.
Step 7 -Serve the scallops with the lemon wedges.
