Ingredients
- 1 cup fresh blueberries
- 2 tablespoons sugar
- 1/4 cup water
- 1 tablespoon cornstarch
- 1 sheet puff pastry, thawed
- 1 tablespoon lemon juice
- 2 teaspoons milk
- 1 cup powdered sugar, plus more, to taste
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Line a baking sheet with parchment paper.
Step 3 -In a small saucepan over medium-low heat, add the blueberries, the sugar, the water, and the cornstarch and stir to combine.
Step 4 -Bring the blueberry mixture to a simmer and cook, while stirring frequently, until thickened, about 10-15 minutes.
Step 5 -Transfer the blueberry mixture from the heat and allow it to cool.
Step 6 -Cut the puff pastry into 6 equally sized rectangles.
Step 7 -Roll each of the puff pastry rectangles into even squares and transfer the squares to the prepared baking sheet, spreading them out evenly.
Step 8 -Add 1-2 tablespoons of the blueberry mixture to the center of each of the squares.
Step 9 -Fold each of the puff pastry squares in half diagonally over the blueberry mixture to make a triangle, pressing the edges slightly to seal.
Step 10 -Pierce the top of each of the puff pastry triangles with a fork to allow steam to escape.
Step 11 -Bake until the turnovers are lightly browned, about 15-20 minutes.
Step 12 -Transfer the baking sheet to a wire rack to cool.
Step 13 -In a small bowl, add the lemon juice and the milk.
Step 14 -Gradually add 1 cup of the powdered sugar to the lemon mixture, while whisking. The glaze should be thin enough to drizzle, but you may need to add the extra powdered sugar, a little at a time, to achieve the desired consistency.
Step 15 -Drizzle the glaze over the turnovers and allow it to harden.
Step 16 -Serve.
