Ingredients
- 4 large cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon sweet paprika
- 1 teaspoon fresh thyme leaves
- 2 tablespoons flat-leaf parsley, finely chopped, plus more, to taste, for garnish
- 1/3 cup extra-virgin olive oil
- 1 lemon, zested and juiced, plus 1 lemon, optional, to taste, halved then sliced, for garnish
- kosher salt, to taste
- black pepper, to taste
- 1 1/2-2 pounds chicken breasts, boneless and skinless, can substitute thighs
- neutral oil, to taste, for oiling the grill grates
Directions
Step 1 -In a large mixing bowl, add the garlic, the oregano, the paprika, the thyme, 2 tablespoons of the parsley, the extra-virgin olive oil, the lemon zest, the lemon juice, the salt, and the pepper and whisk to combine.
Step 2 -Taste the marinade and add more of the salt and the pepper, as needed.
Step 3 -Add the chicken breasts to the marinade mixture and toss until they are well-coated.
Step 4 -Cover the mixing bowl and refrigerate the chicken for at least 2 hours and up to overnight.
Step 5 -Using the neutral oil, lightly oil the grill grates.
Step 6 -Preheat the grill to medium heat.
Step 7 -Add the marinated chicken breasts to the grill and cook, flipping them once, until the chicken breasts reach an internal temperature of about 160 degrees F, about 5 minutes per side.
Step 8 -Transfer the chicken breasts to a plate and immediately tent them with foil.
Step 9 -Let the chicken breasts rest under the foil until they come up to a safe eating temperature of 165 degrees F, about 5-10 minutes.
Step 10 -Serve garnished with the lemon slices and the extra parsley.
