Ingredients

  • 2 pounds chicken breasts
  • 1 tablespoon sage
  • salt, to taste
  • pepper, to taste
  • 32 ounces chicken broth, plus more to taste
  • 1 (10.5-ounce) can cream of chicken soup
  • 1 (32-ounce) package frozen cubed hashbrowns
  • 8 ounces cheddar cheese, shredded
  • 1 cup French fried onions, divided
  • 1 cup frozen veggies
  • 1/2 cup butter, melted
  • 8 ounces sour cream

Directions

Step 1 -In a large pot, add the chicken breasts, the sage, the salt, and the pepper.

Step 2 -Pour the chicken broth over the chicken breasts so they are fully covered.

Step 3 -Bring the chicken breasts to a simmer, cover, and cook until they reach an internal temperature of 165 degrees F, about 30-35 minutes.

Step 4 -Reserve 1 cup of the chicken broth from the pot.

Step 5 -Preheat the oven to 400 degrees F.

Step 6 -Grease a 9x13-inch baking dish.

Step 7 -Transfer the chicken breasts from the pot and shred them with two forks.

Step 8 -In a large bowl, mix the cream of chicken soup, the chicken broth reserved from cooking the chicken, the hashbrowns, the cheese, 1/2 cup of the French fried onions, the veggies, the melted butter, and the sour cream together.

Step 9 -Pour the chicken mixture into the prepared baking dish and top with the remaining French fried onions.

Step 10 -Cover the dish with foil and bake until the hashbrowns are cooked through, about 30-45 minutes.

Step 11 -Uncover and bake the casserole until bubbly, about 5 minutes.

Step 12 -Serve.
