This might be one of the best side dishes we've ever seen, and the fact that it's so easy and fast to make? That's just the cherry (tomato) on top! Blistered Tomatoes sauté bright, juicy tomatoes until softened and sweetened, pairing the vibrancy with tangy vinegar and savory red onion for an exquisite balance of flavors. It's warm, summery, filling, and so, so enticing... something you may not expect from a vegetarian dish! Blistered Tomatoes will become a go-to in your house, no question about it!
Ingredients
- 1 pound cherry or grape tomatoes, washed and dried
- 1/2 cup red onion, diced
- 1/2 cup balsamic vinegar
- 1/2 teaspoon confectioners' sugar
- 1 tablespoon sea salt
- 1/2 tablespoon olive oil
- basil, optional, to taste, sliced thin, for garnish
- green onions, optional, to taste, sliced, for garnish
Directions
Step 1 -Heat a large skillet over medium-high heat until just before smoking.
Step 2 -Add the tomatoes to the dry skillet and cook, turning every minute, until the tomatoes are charred on all sides but still hold their shape, about 3-4 minutes.
Step 3 -Add the onions and the balsamic vinegar and stir to combine.
Step 4 -Stir in the confectioners' sugar and stir until it is dissolved.
Step 5 -Cook, while stirring often, until the onions soften and the vinegar thickens, about 3-5 minutes.
Step 6 -Pour the tomato mixture into a serving bowl.
Step 7 -Season the tomatoes with the sea salt and drizzle them with the olive oil.
Step 8 -Sprinkle with the basil and the green onions and serve.
