Wake up. Roll out of bed. Have breakfast. Or perhaps, roll back into bed and enjoy breakfast in luxury! The Breakfast-In-Bed Bake is a tender cake with a rich buttery flavor and bursts of sweet, tart blueberries. A crunchy layer of warm, delectable streusel on top blankets this cake-like bake, adding texture and some sweet joy. Lean up against the headboard, cushion yourself with pillows, and let this Breakfast-In-Bed Bake pamper you as you deserve!
Ingredients
- For the streusel:
- 1/2 cup unsalted butter, melted
- 1/3 cup light brown sugar, firmly packed
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon or cardamom
- 1 1/4 cups all-purpose flour
- salt, to taste
- For the bake:
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 6 tablespoons unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup whole milk
- 2 teaspoons lemon zest
- 2 teaspoons vanilla extract
- 3 cups fresh blueberries, divided
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -Coat a 9x9-inch baking dish with cooking spray.
Step 3 -Stir 1/2 cup of the melted butter, the brown sugar, 1/4 cup of the granulated sugar, and the cinnamon together in a medium bowl.
Step 4 -Add 1 1/4 cups of the flour and the salt, to taste, to the butter mixture and stir until combined.
Step 5 -Stir the remaining flour, the baking powder, and 1/2 teaspoon of the salt together in a medium bowl.
Step 6 -In a large bowl, use an electric hand mixer and beat the remaining softened butter and the remaining granulated sugar on medium speed until creamy.
Step 7 -Add the eggs, one at a time, to the sugar mixture and beat until just combined after each addition.
Step 8 -Alternate gradually adding the flour mixture and the milk to the sugar mixture, and beat until just combined after each addition.
Step 9 -Stir the lemon zest and the vanilla into the batter mixture.
Step 10 -Gently fold 2 cups of the blueberries into the batter mixture.
Step 11 -Evenly spread the batter in the prepared baking dish.
Step 12 -Sprinkle the top of the batter with the remaining blueberries.
Step 13 -Use clean fingers to crumble the streusel mixture and evenly sprinkle it over the blueberries and the batter.
Step 14 -Bake the batter until a tester inserted into the center comes out clean, about 40-45 minutes.
Step 15 -Allow the bake to cool for 20 minutes.
Step 16 -Slice and serve.
