It's a nice day, isn't it? The sun shining through the windows, a fresh breeze outside... it's just cozy feelings all around. This calls for a treat that tastes as sunny and upbeat as you feel: the appropriately named Calm Cake. This refreshingly bright and sweet sheet cake is tender, buttery, and just loaded with summery lemon flavor and bursts of juicy blueberries. On top is a classic lemon glaze that adds an energizing beam of taste straight to your taste buds! Calm Cake isn't too tough to make, so you can keep the good vibes going through making it and right up through eating it!
Ingredients
- For the cake:
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 1/4 teaspoons salt
- 1 cup butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup buttermilk
- juice and zest of 2 lemons, about 1/4 cup lemon juice
- 1 1/2 cups fresh blueberries, tossed with 1 tablespoon flour
- For the glaze:
- 2 1/2 cups powdered sugar
- 1/3 cup lemon juice
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 9x13-inch baking dish.
Step 3 -Line the baking dish with parchment paper so there is overhang on the long sides of the pan.
Step 4 -In a medium bowl, whisk together the flour, the baking powder, the baking soda, and the salt.
Step 5 -In the bowl of a stand mixer fitted with a paddle attachment or in a large bowl and using a hand mixer, cream together the butter and the granulated sugar until light and fluffy.
Step 6 -Add the eggs, the vanilla, and the buttermilk to the butter mixture and mix together on low until incorporated.
Step 7 -Add the dry ingredients mixture to the butter mixture and mix until no streaks of the flour remain.
Step 8 -Mix 1/4 cup of the lemon juice and the lemon zest into the batter.
Step 9 -Gently stir the blueberries with a rubber spatula into the batter.
Step 10 -Pour the cake batter into the prepared baking dish.
Step 11 -Bake until a toothpick inserted into the center comes out with only a few moist crumbs, about 40-45 minutes.
Step 12 -Allow the cake to cool completely.
Step 13 -Combine the powdered sugar and the remaining lemon juice.
Step 14 -Pour the glaze over the cooled cake.
Step 15 -Let the glaze harden.
Step 16 -Serve.
