  • 1/2 cup brown sugar
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon freshly cracked black pepper
  • 3 tablespoons olive oil
  • 1 (4-pound) pork loin
  • parsley, optional, to taste, chopped, for garnish

Directions

Step 1 -Preheat the oven to 400 degrees F.

Step 2 -Line a baking sheet or a large casserole dish with parchment paper.

Step 3 -In a bowl, add the brown sugar, the cayenne pepper, the garlic powder, the paprika, the salt, the black pepper, and the olive oil and stir to combine.

Step 4 -Place the pork loin on the prepared baking sheet, making sure the fat cap faces up.

Step 5 -Rub the brown sugar mixture all over the top and sides of the pork loin.

Step 6 -Roast the pork loin for 10 minutes.

Step 7 -Reduce the oven temperature to 350 degrees F and continue to roast the pork until it reaches an internal temperature of 145 degrees F, about 15 minutes per pound, or 1 hour for a 4-pound pork loin.

Step 8 -Allow the pork loin to rest for 10 minutes.

Step 9 -Slice and serve garnished with the parsley.
