It's time to get ready for the big cattle drive! You're going to need all the energy you can get, so that calls for this Cattle Drive Casserole! A cheesy biscuit crust on the bottom, a cheesy blanket on top, and plenty of savory taco meat, rich tomatoes, and spicy peppers in the middle! A tangy, mayo-cheese sauce adds another flavor hit to this corral of goodness! Cattle Drive Casserole is going to drive your taste buds wild!
Ingredients
- 1 (11.36-oz.) package Cheddar-Bay Biscuit® mix plus the seasoning packet
- 3/4 cup water
- 1 tablespoon olive oil
- 2 pounds ground beef
- 1/2 cup yellow onions, finely chopped
- 1/2 cup poblano chiles, chopped
- 1 (1-ounce) packet taco seasoning
- 3/4 teaspoon kosher salt
- 3/4 cup mayonnaise
- 3/4 cup sour cream
- 1/2 teaspoon smoked paprika
- 1 (8-ounce) package pepper jack cheese, shredded, divided
- 1 (8-ounce) package sharp cheddar cheese, shredded, divided
- 1 (15-ounce) can fire-roasted diced tomatoes, drained
- 1 (4-ounce) can diced green chiles, drained
- dried parsley, optional, to taste, for garnish
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Lightly coat a 9x13-inch baking dish with cooking spray.
Step 3 -In a medium bowl, add the biscuit mix, its seasoning packet, and the water and stir to combine into a dough.
Step 4 -Spread the biscuit dough into the prepared baking dish.
Step 5 -Bake until the biscuit dough just starts turning golden-brown, about 10-12 minutes.
Step 6 -Transfer the baking dish from the oven and set it aside.
Step 7 -In a large skillet over medium-high heat, add the olive oil.
Step 8 -Add the beef to the hot oil in large chunks and cook, undisturbed, until they are well-browned on the bottom, about 3 minutes.
Step 9 -Stir the beef and cook, while stirring occasionally, until it is almost cooked through with some pink remaining, about 5 minutes.
Step 10 -Add the onions and the poblanos to the beef and cook, while stirring occasionally and crumbling the beef, until the beef is fully browned and the onions are starting to soften, about 3 minutes.
Step 11 -Add the taco seasoning and the salt to the beef mixture and stir to combine.
Step 12 -Transfer the skillet from the heat.
Step 13 -In a medium bowl, add the mayonnaise, the sour cream, and the smoked paprika and stir to combine.
Step 14 -Add 1 cup of the pepper jack cheese and 1 cup of the cheddar cheese to the mayonnaise mixture and stir to combine.
Step 15 -Spoon the beef mixture evenly over the biscuit dough crust in the baking pan.
Step 16 -Add spoonfuls of the diced tomatoes and the green chiles evenly over the beef mixture in the baking dish.
Step 17 -Spoon the mayonnaise mixture over the beef mixture and gently spread it out evenly.
Step 18 -Sprinkle the remaining pepper jack cheese and the remaining cheddar cheese evenly over the mayonnaise mixture.
Step 19 -Bake until the cheese is melted and starting to brown in spots and the beef mixture is bubbling at the edges, about 30 minutes.
Step 20 -Transfer the casserole from the oven and allow it to rest for 10 minutes.
Step 21 -Serve garnished with the parsley.
