Ingredients

  • For the spaghetti:
  • 1 pound chicken breasts, boneless and skinless
  • 1 (10-ounce) can diced tomatoes with green chilies
  • 1 (10.5-ounce) can cream of chicken soup
  • 1/2 cup chicken broth
  • 1 pound processed cheese, such as Velveeta®, cut in small cubes
  • 1 (16-ounce) package spaghetti, cooked and hot
  • Optional, for topping:
  • cilantro, to taste, chopped
  • jalapenos, to taste, sliced
  • scallions, to taste, sliced
  • cheese, to taste, of your choice, shredded

Directions

Step 1 -In a slow cooker, add the chicken, the tomatoes with green chilies and their juices, the cream of chicken soup, the broth, and the processed cheese and stir to combine.

Step 2 -Cover the slow cooker and cook on low, until the chicken breasts reach an internal temperature of 165 degrees F, about 4 hours.

Step 3 -Transfer the chicken breasts to a cutting board and using two forks, shred the chicken.

Step 4 -Add the spaghetti and the shredded chicken to the cooking liquid in the slow cooker and stir to combine.

Step 5 -Serve with your favorite toppings.
